  • 6-8 potatoes, chopped
  • ¼ C. onion, diced
  • 2 T. olive oil
  • 1 T. butter, melted
  • Salt and pepper to taste
  • 4-6 slices bacon, cooked
  • ¼ C. Parmesan cheese, grated
