Tender Roasted Brussels Sprouts with Canadian Bacon
Serving Size / Yield
- 2 lbs. Brussels sprouts, halved and cores removed
- salt and pepper, to taste
- 4 scallions, sliced thinly
- olive oil
- 2 C. Canadian bacon, roughly chopped
Heat the oven to 425 degrees and toss the Brussels sprouts in olive oil on a large cookie sheet. Add salt and pepper and bacon.
Roast for about 20 minutes, or until the outsides of the Brussels sprouts begin to caramelize. Open the oven, add the scallions. Toss, and lower heat to 400 degrees. Cook for another 20 minutes.
