Ingredients
- 8 garlic cloves
- 8 black peppercorns
- 2 tsp. dried oregano
- 2 Tbs. corn oil
- 2 Tbs. cider vinegar
- 2 Tbs. salt
- 1(6 lb.) pork shoulder

Directions
Combine the first 6 ingredients in a mortar and crush. Rub the meat well with the spices. Let the meat rest overnight.
Preheat the oven to 350 degrees F. Bake the pork shoulder in a roasting pan for 3 to 3 1/2 hours or until the skin is very crispy. Remember to turn meat every hour. Let it rest for at least 15 minutes before carving.
