  • 1 onion, diced
  • 1 stalk celery, chopped
  • 3 cloves garlic, minced
  • 6 C. vegetable broth
  • 1 (15 oz.) can red kidney beans, rinsed and drained
  • 1 (15 oz.) can cannellini beans, rinsed and drained
  • 1 tsp. oregano
  • 1 tsp. rosemary
  • ½ tsp. red pepper flakes
  • 1 small zucchini, diced
  • ¾ C. small rigatoni noodles
  • Salt and pepper to taste
  • Parsley for garnish

Combine onion, celery, garlic, broth, kidney beans, cannellini beans, oregano, rosemary, salt, pepper, and red pepper flakes in your crockpot. Cook on high for 3-4 hours. During the last hour of cook time, add zucchini and pasta. Before serving, check to see if pasta is tender. Garnish with parsley and serve.
