  • 6 russet baking potatoes
  • 1 T. olive oil
  • Salt and pepper to taste
  • ¼ C. onion, diced
  • 6-10 strips bacon, cooked
  • 1 C. cheddar cheese
  • ½ C. sour cream
  • Green onions for garnish

Wrap potatoes in aluminum foil and place in crockpot; cook on high for 4 hours until tender. In a large skillet, heat oil and sauté onions until fragrant. Unwrap potatoes, cut them in half lengthwise, and scoop out flesh to transfer into a bowl. Mix potato flesh with ½ cup of cheddar, salt, pepper, and sautéed onions. Spoon potato mix back into potato skins and top with bacon, cheddar, sour cream, and green onions.
