  • 1 ¼ C. flour + 1 T.
  • 3 T. powdered sugar
  • 1 stick butter + 1 T.
  • 2 (8 oz.) packages cream cheese, softened
  • 1 egg
  • 1/3 C. brown sugar
  • 1 tsp. vanilla extract
  • 2-4 apricots, peeled, pitted, and sliced
  • ½ C. sugar
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ C. apricot jam
  • 1 T. water

Preheat oven to 375 degrees. Using a food processor, pulse together 1 ¼ cup of flour, powdered sugar, and 1 stick of butter until crumbly. Press in a tart pan, bake for 10 minutes, and set aside to cool. In a large bowl, use an electric mixer to cream together cream cheese and egg. Mix in brown sugar and vanilla until smooth. Spread filling over crust. In a separate bowl, toss apricot slices with sugar, cinnamon, nutmeg, remaining flour, and remaining butter. Arrange apricot slices on top of filling in a spiral pattern. Brush the top with a mixture of apricot jam and water and bake for 10 to 15 minutes until golden and bubbly.
