This tender turkey soup is fairly simple to make. It has bright undertones of rosemary and little kick from the red pepper. If you’re looking for a flavorful and classic soup without all of the ingredients, this is for you!

  • 9 slices of smoked turkey, thick cut (about ½ in.)
  • 32 oz. chicken broth
  • 1 medium yellow onion, minced
  • 2 cloves of garlic, minced
  • 1 Tbs. butter
  • 1 Tbs. fresh parsley, chopped (+ more for garnish)
  • 1 bay leaf
  • 2 sprigs of fresh rosemary
  • Salt and pepper to taste
  • A dash of red pepper flakes

In a large saucepan, heat the butter on medium-high. Toss in the onion and saute it until it’s translucent and browning (make sure the onions don’t burn; this process should take about 15 minutes). Add in the garlic and continue to saute for about 3 minutes. Add in the rosemary sprigs and parsley and saute for another couple of minutes. Pour in the chicken broth, bay leaf, and turkey. Bring this to a boil and lower to simmer for 20 minutes. Add salt and pepper to taste.
