Ingredients

  • 2 C. broccoli florets
  • ½ C. mushrooms, chopped
  • 1-2 carrots, peeled and sliced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 ½ C. vegetable broth
  • 1 (14 oz.) jar Alfredo sauce
  • 2 C. pasta
  • 1 T. cornstarch + 1 T. water
  • ½ C. Parmesan cheese, shredded

Directions

In a greased slow cooker, add broccoli, mushrooms, carrots, garlic, salt, pepper, and vegetable broth. Cook on high for 2 to 3 hours until vegetables are tender. Stir in Alfredo sauce, pasta, and cornstarch and water mixture. Cook for an additional 30 minutes until pasta is cooked, stir in Parmesan, and serve.
