  • 1 ½ cups flour
  • 1 cup granulated sugar
  • 1 ½ cup buttermilk
  • 2 eggs
  • 3 limes
  • 4 tablespoons tequila
  • ½ teaspoon vanilla
  • ¾ teaspoon salt
  • ½ cup butter
  • 1 ½ teaspoons baking powder
  • 1 cup butter

Preheat the oven to 350 degrees F and line a muffin tin with cupcake liners. Sift together the flour, baking powder, and ½ teaspoon salt. Use an electric mixer to beat the ½ cup butter and sugar together with medium speed for 5 minutes. Reduce the speed and gradually add the eggs. Mix thoroughly after each egg. Add the zest and juice of 2 limes, vanilla, and 2 tablespoons of tequila. Mix until combined. Reduce the mixer speed to low and add the dry ingredients gradually and alternate with the buttermilk. Mix until everything is incorporated and divide the batter between the cupcake cups. Bake for 20 minutes.

To make the tequila lime buttercream frosting, whip the remaining butter on medium-high speed for 5 minutes before reducing the speed. Slowly add the powdered sugar. Next, add the juice from the last lime, the remaining tequila and salt. Mix until it is fluffy and incorporated. Frost the cupcakes and garnish with ½ lime moons and a sprinkle of lime zest.
