Inspired by the mini steak tacos served at Rock Bottom, these tequila lime steak tacos are great served as an appetizer or main course. They are simple to make and will be a hit with the whole family!

  • 1-2 lb. beef tenderloin
  • 1 C. tequila
  • 1/2 C. oil
  • 2 limes, juiced
  • 1 Tbs. ancho chili powder
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 1 tsp. pepper
  • 5 avocados
  • 2 garlic cloves, crushed
  • 1 small tomato, minced
  • 1 jalapeƱo, minced
  • 1 lime, juiced
  • 1/4 red onion, minced
  • 1-2 Tbs. fresh cilantro,minced
  • 1 tsp. salt
  • 10-15 flour tortillas
  • 4-5 oz. shredded asiago cheese

In a large bowl, whisk together the tequila, oil, lime juice, ancho chili powder, onion powder, garlic powder, salt, and pepper. Add the meat and coat it by spooning the marinade over the pieces. Cover the bowl with plastic wrap and refrigerate for 1 to 8 hours. When it is finished marinating, grill the beef until the internal temperature is 130-135 degrees. Remove from the grill and let sit for 10 minutes before slicing it into thin pieces.

In another bowl, mash together the avocados, tomatoes, garlic, lime juice, red onion, salt, and cilantro in order to make the guacamole.

Heat the oven to 350 degrees and warm the tortillas for 3 to 5 minutes. In each tortilla place 3 to 5 slices of beef, 2 to 3 spoonfuls of guacamole, and sprinkle cheese on top.
