  • 1/2 C. teriyaki sauce
  • 2 T. sugar
  • 2 cooked chicken breasts, cut into 1/2 in slices
  • 2 tsp. cornstarch
  • 2 T. olive oil
  • 1 C. cooked rice
  • 3 shredded carrots
  • 2 C. chopped broccoli

In a large bowl, mix together the teriyaki and sugar, then toss in the chicken, making sure the pieces are well coated. Allow the chicken to sit in the sauce for 10 minutes. In a small bowl, dissolve the cornstarch in water. Heat the oil in a skillet over medium heat, then add the chicken, all the teriyaki marinade, and the cornstarch mixture. Allow the mixture to boil until the sauce begins to thicken, then add the carrots and broccoli. Serve over rice.
