This Japanese style salmon is a perfect light meal with strong Asian flavor! This marinated salmon on a bed of soba noodles is great for quick and flavorful dinner!

Ingredients

  • 1 inch of fresh ginger, finely sliced
  • 2 cloves of garlic, peeled and finely sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons mirin rice wine
  • 2 tablespoons brown sugar
  • 4 salmon fillets, skin on
  • Salt and pepper to taste
  • 8 ounces soba noodles
  • 1 finely chopped red chili,
  • 1 carrot, peeled and coarsely grated
  • 2 limes
  • 1 teaspoon sesame oil

Directions

Combine the garlic, ginger, mirin and soy sauce in a jug. Place the salmon fillets in a shallow dish and pour the marinade over it. Leave for at least 30 minutes.
Cook the soba noodles per the instructions. Drain and place in a large bowl.
Place a frying pan over medium heat and add a dash of oil. When hot, add the salmon, skin side down, saving the marinade.
Cook for 2 minutes then pour in the saved marinade and cook for another minute or so, until the fillets are opaque halfway up the sides.
Turn them over and cook for another 3-4 minutes, basting so that the salmon is well coated.
Add the spring onions, chili and carrot to the noodles. Add the juice of 1 lime and drizzle with sesame oil before tossing together.
Spoon the noodles into four bowls and place the salmon on top with any leftover teriyaki sauce spooned over.
Garnish with lime wedges and serve!
