Teriyaki Tofu Triangles

This vegetarian dish uses Asian flavors to make a memorable meal.

  • one 16-oz. tub extra-firm tofu
  • 1 or 2 scallions, thinly sliced
  • Marinade:
  • 2 Tbs. soy sauce
  • 1 Tbs. olive oil
  • 1 tsp. dark sesame oil
  • 1 Tbs. honey
  • 2 tsp. rice vinegar or white wine vinegar
  • 1/2 tsp. grated fresh ginger
  • 2 tsp. hoisin sauce

Combine marinade ingredients in a bowl.  Cut tofu into 1/2-inch thick slices, blot well, then cut again to make them 1/4-inch thick slices.  Blot again.

Cut each slice into 2 squares, then each square into 2 triangles.  Place in pan, drizzle with marinade, and turn to coat each side of the tofu with the marinade  Let stand about 10 minutes.

Heat a skillet and place tofu and marinade into skillet.  Cook over medium-high heat, stirring frequently until tofu is browned. Sprinkle scallions over tofu and serve.
