Tex-Mex Chops

These easy chops are cooked quick with salsa, chilies, and cheese.

Ingredients

  • 4 boneless pork chops ---about 1 lb.
  • 1 tsp. vegetable oil
  • 1 1/2 C. bottled salsa chunky style
  • 1 C. (4oz.) diced chilies
  • 1/2 tsp. ground cumin
  • 1/4 C. grated cheese (cheddar)

Directions

Heat oil in non stick pan over medium-high heat. Brown chops on one side about 3 minutes. Turn chops. Add salsa chilies & cumin to skillet mix well. Lower heat: cover & barely simmer for 8 minutes. Uncover and top each chop with 1 Tbs. cheese. Cover & simmer 2to 3 minutes until cheese is melted.
