  • 2 lb. ground beef
  • 4 eggs, beaten
  • 1 T. salt
  • 3/4 C. quick oats
  • 1 C. chunky salsa
  • 3/4 C. ketchup
  • 1/4 tsp. cumin
  • 1/4 tsp. chili powder
  • 2 large tomatoes, sliced
  • 1 1/2 C. shredded cheddar cheese
  • 1/2 C. sour cream
  • 1/4 C. chopped green onion

Preheat your oven to 375°F. In a large bowl, combine beef, eggs, salt, oats, and salsa. Once incorporated, use your hands to form a loaf and place in a large baking dish. In a small bowl, combine ketchup, cumin, and chili powder. Spread ketchup on top of loaf and bake for 55 minutes. Sprinkle with cheese and bake for another five minutes. Let stand for five minutes before topping with sour cream and green onion
