  • 8 eggs
  • 3 t butter
  • 3 t vegetable oil
  • ½ c red pepper, chopped
  • 2 small Roma tomatoes, chopped
  • ½ c Monterey Jack cheese
  • ¼ C salsa
  • 2 jalapeno peppers, chopped
  • 4 tortillas, cut into strips

Heat vegetable oil in a skillet over medium high heat. Saute the onion and jalapenos, seasoning with salt and pepper. Cook the vegetables until they’re soft, and the onions are translucent. Once vegetables are cooked, add in the tortilla strips and cook them for about two minutes or until they’re soft.
