  • 2 cups chopped cooked brisket
  • 1 package of tater tots
  • 1 15 ounce can corn, drained
  • 1 12 ounce jar chunky salsa
  • 1 can sliced black olives
  • 1 bell pepper, diced
  • 1 tomato, diced
  • 2 ½ cups shredded cheese
  • 2 tablespoons chopped green onion
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups milk
  • Salt and pepper to taste

Preheat the oven to 350F. Grease a casserole dish.
Melt the butter in a skillet. Add the flour and whisk to form a roux.
Stir in the milk until well-combined. Cook, stirring occasionally until thickened and bubbly.
Add two cups shredded cheese and stir until the cheese is melted and fully incorporated. Add salt and pepper to taste. Turn heat to low and let warm.
Scatter brisket on the bottom of the casserole dish. Pour cheese sauce over the meat.
Add salsa, corn, olives, bell pepper and tomatoes on top of the cheese sauce.
Spread tater tots over the cheese sauce so that the dish is evenly covered.
Bake for 30 minutes.
After 30 minutes, scatter the remaining ½ cup of cheese over the top. Bake for another ten minutes.
When finished, remove from the oven and let stand for 5-10 minutes.
Sprinkle the chopped green onion on top, then enjoy!
