Masa is basically ground corn meal, and is an essential ingredient in much of Mexican cooking.

  • 1 1.2 lbs trimmed chuck, cut in 1/2 cubes
  • 1 med onion, chopped
  • 1 clove garlic, minced
  • 2 C. spicy tomato juice
  • 1 C. beef broth
  • 1 tsp. Worcestershire sauce
  • 2 Tbs. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. cayenne pepper
  • 1 Tbs. masa
  • 1 Tbs. water

Brown meat and onions; drain. Add all ingredients except masa and simmer over low heat for two hours, adding more tomato juice if needed. Combine one Tbs. of masa with one Tbs. water. Whisk until smooth. Add to bubbling chili and continue cooking for 15 min or until thickened. Garnish with cheese, cream and sliced jalapeno, if desired.
