Ingredients
- 2 cans black eyed peas, drained
- 2 avocados, chopped
- 1 bunch green onion, sliced
- 2 jalapenos, chopped (seed jalapenos for mild flavor)
- 2 lg, tomatoes, remove seeds and chop
- cheese and garlic Italian dressing (i.e. Bernstein's)
- corn chips
Directions
Combine beans, onion, jalapenos, and enough dressing to saturate mixture (do not use the entire bottle; too much dressing makes the dip "soupy"). Place in the refrigerator for a few hours until marinated. Add avocados just before serving (to prevent from turning brown). If needed, add more dressing at this time. Serve with corn chips.
