  • 4 lb. beef chuck, cubed
  • 3 Tbsp. canola oil
  • 2 Tbsp. diced garlic
  • 2 tsp. chili powder
  • 1 1/4 tsp. cumin
  • 1 Tbsp. smoked paprika
  • 1/4 tsp. black pepper
  • 2 tsp. salt
  • 1 Tbsp. brown sugar
  • 2 C. crushed tomatoes
  • 2 cans red kidney beans
  • 1 Tbsp. vinegar
  • 1/8 tsp. crushed red pepper flakes
  • 2 Tbsp. corn starch
  • 1/2 C. shredded cheddar cheese

Put the oil in the bottom of Dutch oven and heat over medium. Cook the garlic in the oil about 2 minutes. Add the beef cubes to the pot and stir until they are brown. Lower the temperature and add the cumin, paprika, salt, chili powder, vinegar, brown sugar, tomatoes, beans, black pepper, and red pepper flakes to the pot. Stir until well combined. Simmer for 10 minutes and add the corn starch to thicken. Cook another 10 minutes and serve with cheddar cheese on top.
