Place yeast in warm water with one teaspoon of sugar. Scald milk in microwave and let cool. In a large bowl, combine yeast, sugar, and enough flour for a medium-sized batter. Beat well and let stand until foamy. Add melted butter, eggs, and salt. Add in the remaining flour and beat well. Place dough on a lightly floured counter and let rest. Grease another large bowl and set aside. Knead dough until shiny and smooth and place in greased bowl. Cover and let rise until doubled. Preheat your oven to 375°F and grease two baking sheets. Once doubled, punch the dough down and turn out onto a floured surface. Divide into portions and let rest for 10 minutes. Shape dough in desired roll shape and place on prepared baking sheets. Let rise until doubled. Bake for 10 minutes, then reduce temperature to 350°F and bake for another 10 minutes. Let cook on rack and serve!
