Ingredients

  • 4 strips Thick-Sliced Bacon, cut into bite-sized pieces
  • 1 3/4 C. Red Onion, thinly sliced, divided
  • 1 tsp. Sea Salt, divided
  • 1/2 tsp. + 1/8 tsp. Ground Black Pepper, divided
  • 1/3 C. Balsamic Vinegar
  • 1/2 tsp. Dijon Mustard
  • 1 1/4 lb. Lean Ground Beef
  • 1/2 tsp. Worcestershire Sauce
  • 1 Tbs. Canola Oil
  • 1 C. Barbecue Sauce of Choice
  • 4 Multigrain Hamburger Buns, toasted
  • 1 Thai Chili Pepper, stemmed, seeded, and sliced
  • 1 C. Arugula

Directions

In a large skillet over medium-high heat, sauté the bacon for 10 minutes, or until lightly browned but not crispy. Scoop out the bacon and place on paper towels to drain. Drain off the remaining bacon grease in the skillet, reserving 3 tablespoons. In the same skillet, combine the reserved bacon grease, 1 1/2 cups of red onion, 1/4 teaspoon of salt, and 1/8 teaspoon of pepper. Cover and cook the onions for 10 minutes until tender and lightly browned, scraping off any onion that sticks to the bottom of the skillet if necessary. Stir in the bacon, balsamic vinegar, and mustard along with 1/3 cup of water. Bring the mixture to a boil, then reduce heat to low. Let jam simmer uncovered for 5 minutes until thickened. In a medium mixing bowl, mix together the ground beef and Worcestershire sauce with the remaining salt and pepper. Divide the mixture into 4 equal-sized portions and flatten each portion into a 1" thick patty. Warm the canola oil in another large skillet over medium heat. Add the burgers and cook for 4-5 minutes per side, or until browned and at desired doneness. Pour 1/4 cup of barbecue sauce onto the bottom half of each hamburger bun. Layer atop each bottom half, in order, 1 hamburger patty, as much bacon onion jam as desired, a sprinkling of chili pepper slices, 2-3 red onion slices, and 1/4 cup of arugula. Top each burger with the top half of the hamburger bun, pressing down gently to help burgers stick together.
