12 potato skins


  • 6 Russet Potatoes
  • 3 Tbs. Olive Oil
  • 2 Tbs. Butter, melted
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
  • 1 C. Shredded Cheddar Cheese
  • 8 strips Bacon, crumbled
  • 1/2 C. Sour Cream
  • 1/4 C. Green Onions, green parts only, sliced

Preheat oven to 400 degrees. Line a large baking sheet with foil. Rub the potatoes with the olive oil, and arrange on the baking sheet. Bake for about 50 minutes, or until potatoes are fork-tender. Let potatoes sit until cool enough to handle. Slice the potatoes in half lengthwise. Scoop out and discard the flesh, leaving 1/4" layer in the skins. Brush the potatoes with the butter, and season with salt and pepper to taste. Rearrange potato skins skin-side-up on the foil-lined baking sheet. Bake for about 8 minutes. Carefully flip the skins over, and sprinkle them with even amounts of cheese and bacon. Continue baking for 2-4 minutes, or until the cheese is fully melted. Spoon a dollop of sour cream into each potato skin, then sprinkle with the green onion.
