  • 2 tablespoons coconut oil
  • 1 pound cubed chicken breasts
  • 1 diced onion
  • 2 teaspoons grated ginger
  • 4 tablespoons red curry paste
  • ¼ cup brown sugar
  • 1 ½ tablespoon soy sauce
  • 2 cans coconut milk
  • 2 cans chicken broth
  • 2 teaspoons chili garlic sauce
  • 2 sliced red bell pepper
  • 6 ounces rice noodles
  • ½ cup chopped cauliflower
  • Salt and pepper

In a pot over medium-high heat, heat the coconut oil and then add the onions and chicken. Cook for 5 minutes and then add the ginger, curry paste, and chili garlic sauce. Season with salt and pepper and coat the chicken in the spices. Add the chicken broth, soy sauce, brown sugar, and coconut milk. Next, lower the heat and cook for 10 minutes. Add the cauliflower, noodles, and red pepper, stirring to cover the noodles. Cook for 6 more minutes and then serve.
