  • 1 ½ lb. tilapia or cod, cut into bite-sized pieces
  • 2 (12 oz.) cans coconut milk
  • 2 C. chicken broth
  • 2 T. red curry paste
  • 3 T. brown sugar
  • 2 T. peanut butter
  • 2 T. fish sauce
  • 1 onion, diced
  • 2 tsp. ginger
  • 2 T. lime juice
  • Fresh basil for garnish

Line the bottom of your crockpot with fish and onion. In a bowl, whisk together coconut milk, chicken broth, red curry paste, brown sugar, peanut butter, fish sauce, and ginger. Pour into crockpot, mix to coat, and cook on high for 4 hours. Stir in lime juice and basil and serve.
