This Thai rice recipe is pretty basic but can be dressed up in so many ways!

  • 1 C. uncooked rice
  • 1 1/2 C. coconut milk (light or regular)
  • 1/2 C. water
  • 1/2 tsp. salt (optional)

Combine rice, coconut milk and water in a 3-qt. saucepan.  Bring to a boil, stir once. Cover with a tight fitting lid or foil; reduce heat and simmer 20 minutes. Remove from heat and let stand (covered) 5-10 minutes longer.
