  • 2 c diced celery
  • 1 lg. sweet onion, diced
  • 3 red peppers, diced
  • 4 c. fresh diced tomatoes
  • 1/4 c. coconut milk
  • 3 Tbs. spicy sesame oil
  • 2 -3 garlic cloves
  • salt, to taste
  • 8 -16 drops sriracha sauce
  • 1/2 c rice wine vinegar
  • 1 lb frozen cooked shrimp, tails removed

Place all of the ingredients into the crockpot and cook on high for 4 1/2 hours or on low for 8-10 hours. Garnish with fresh cilantro or a dollop of sour cream, if desired.
