Thai Style Pineapple Chicken Stir Fry

This dish is inspired by the tastes of Thailand, with it's mixture of sweet, savory, and spicy flavors and the colorful combination of peppers, chicken, and pineapple! If you aren't a fan of spicy food, omit the red chili pepper. Serve it with jasmine rice for a complete meal.

Ingredients

  • 1 lb. boneless, skinless chicken breast, cubed
  • 1 Tbs. fish sauce
  • 2 Tbs. cornstarch
  • 1 Tbs. oil, divided
  • 1 tsp. garlic, minced
  • 1 tsp. ginger, minced
  • 2 C. bell peppers, cubed
  • 1 red chili pepper, chopped
  • 1 C. fresh pineapple chunks
  • 1/2 C. pineapple and sweet chili sauce

In a bowl, combine the chicken and fish sauce. Add in the cornstarch and toss to coat evenly. Set it aside.

In a large skillet, heat 1/2 Tbs. oil over medium high heat and add the garlic and ginger. Stir fry for 30 seconds then add the bell peppers, pineapple, and chili pepper. Stir and cook for 3 to 5 minutes, or until the peppers are tender but still crisp. Add the pineapple and chili sauce. Cook, stirring frequently, until heated through, then remove from the skillet.

Heat the remaining oil in the skillet and add the chicken. Cook for 5 minutes, or until heated through. Return the pepper mixture to the skillet and stir fry until well combined and heated through. Serve warm.
