Ingredients
- 6 fat-free flour tortillas (8 to 10 inch)
- 2/3 C. reduced-fat peanut butter spread
- 1/4 C. soy sauce
- 2 Tbs. seasoned rice vinegar
- 2 tsp. sugar
- 2 C. shredded mozzarella cheese
- 2 C. fresh bean sprouts
- 1 1-lb. bag frozen stir-fry vegetables, thawed, drained
Directions
Heat oven to 400 degrees. On ungreased large cookie sheet, place tortilla. Bake 5 minutes. Meanwhile, in small bowl, mix peanut butter spread, soy sauce, vinegar and sugar. Spread peanut butter mixture on warm tortilla. Top each with 1/4 cup cheese. Spread bean sprouts and stir-fry vegetables evenly on tortillas. Sprinkle with remaining 1/2 cup cheese. Bake 10 to 15 minutes or until cheese is melted.
