This ice cream is perfect for matcha fans who want to enjoy their creamy green tea favorite year-round. Put your hot tea on ice and combine with some creamy avocado for a refreshing, homemade treat to enjoy on one of these sweltering mid-summer evenings.

  • 1 cup water
  • 1 cup sugar
  • 6 green tea bags or about 4 tbsp matcha mix
  • ½ cup honey
  • 4 ripe avocados
  • 2 tablespoon lime juice
  • 1 cup whole milk
  • 2 cups heavy cream

Bring one cup of water to a boil, and then gradually add your sugar. Stir it constantly and allow it to dissolve.
Next, either add your matcha mix or place your teabags into the water and allow it to steep for 15 minutes.
Once your tea is steeped (or your matcha mix is really stired in) add your honey and allow your tea to cool in the fridge for an hour.
As you cool your tea, it’s time to deal with avocados. Slice the avocados in half, remove the pits, and place flesh into a blender. Once your sweetened tea is properly chilled, pour it into the blender as well. Finally, pour in your milk and cream. Once all your ingredients are in the blender, puree it all until smooth.
Scrape the mixture into a bowl, press a piece of plastic wrap on the surface of the mixture and freeze it for at least two hours or until firm.
Once the ice cream is cool and ready, scoop and serve.
