  • 2 C. all-purpose flour
  • 2 C. sugar
  • ¾ C. unsweetened cocoa powder
  • 1 tsp. espresso powder
  • 1 C. milk
  • ½ C. vegetable oil
  • 2 eggs
  • 2 tsp. vanilla extract
  • 2 tsp. baking powder
  • 1½ tsp. baking soda
  • 1 tsp. salt
  • 1 C. boiling water
  • Toppings:
  • Chocolate buttercream frosting
  • Canned cherries
  • Whipped cream

Preheat the oven to 350 degrees. Prepare a cake pan by spraying it with cooking spray. Add the sugar, flour, cocoa, baking powder, salt and espresso powder into a bowl. Mix everything together. Add in the milk, vegetable oil, eggs, and vanilla. Mix thoroughly. Transfer mixture into the prepared baking pan. Bake fro 30-35 minutes. Allow it to cool. Frost the cake with the chocolate buttercream frosting. Add whip cream and cherries to garnish the cake.
