The Best Chocolate Ginger Cookies

- 1/2 stick butter (unsalted)
- 1/2 C. sugar
- 1 egg
- 1 C. flour
- 2 tsp. ground ginger (or candied ginger pieces)
- 1/2 C. cocoa powder (or dark chocolate chips)
Preheat the oven to 350 degrees and grease two baking trays and set aside.
Now mix the butter and sugar well until it is light and fluffy. Add in the egg, chocolate chips ginger and mix well until it turns into a dough consistency.
Make small balls out of the cookie dough mixture and place on to the trays. Flatten them with your fingers and bake for 15 minutes. Allow the cookies to cool before serving them.
