Begin by sprinkling salt and pepper over the chicken and then mixing together the buttermilk, garlic, thyme, and cayenne pepper in a bowl. Pour this mixture into a resealable plastic bag and add the chicken into it, sealing it and letting it sit in the fridge for at least 2 hours. Mix together the flour, baking powder, paprika, onion powder, red pepper flakes, oregano, and ground mustard in a different bowl, and then pour that mixture into a different resealable bag.

Next, fill a deep skillet with the vegetable oil, making sure that there’s enough to completely submerge your chicken pieces. Heat up this oil until it reaches around 350 degrees Fahrenheit, and then take a portion of your chicken out of the wet bag and place them into the dry bag. Shake them until they’re evenly coated with the flour mix and then lower them into the oil to be fried.

Lower the temperature of the oil to about 300 degrees Fahrenheit so that the chicken doesn’t burn. Turn each piece so that every side gets to be golden brown, frying them each for about 15-20 minutes. Repeat these steps with the remainder of your chicken and serve warm!
