  • 2 C. sifted flour
  • 1/2 C. powdered sugar
  • 1 C. butter
  • 4 large eggs, beaten
  • 2 C. white sugar
  • 1/3 C. lemon juice
  • 1/4 C. flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. fresh lemon zest

Preheat your oven to 350°F. In a medium-size bowl, add butter into two cups of sifted flour, and powdered sugar. Mix until doughy. Press mixture into the bottom of a 13x9x2-inch pan and bake for 20 minutes. In another medium-size bowl, combine eggs, sugar and lemon juice. Combine flour and baking powder and pour into egg mixture. Spoon over crust and bake for an additional 25 minutes.
