  • 6 egg yolks
  • 3/4 C. white sugar
  • 2/3 C. milk
  • 1 1/4 C. heavy cream
  • 1/2 tsp. vanilla extract
  • 1 lb. mascarpone cheese
  • 1/4 C. strong brewed coffee, room temperature
  • 2 T. rum
  • 2 3 oz. packages ladyfinger cookies
  • 1 T. unsweetened cocoa powder

Whisk together egg yolks and sugar in a medium saucepan until well mixed. Whisk in milk and begin to cook over medium heat, whisking constantly until mixture comes to a boil. Gently boil for one minute. Remove mixture from heat and allow it to cool. Cover tightly and place in your refrigerator for one hour. Beat cream with vanilla extract in a medium bowl until stiff peaks form and set aside. Remove egg yolk mixture from refrigerator and whisk in mascarpone until smooth. In a separate bowl, combine coffee and rum. Split ladyfingers in half lengthwise and soak in coffee mixture. Place half of the soaked ladyfingers in the bottom of a 7x11 inch dish. Spread half of mascarpone mixture over ladyfingers and half of the whipped cream on top of that. Repeat the same process for each layer and sprinkle with cocoa. Cover and place in your refrigerator for 5 hours.
