  • Meatballs:
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/3 C. chicken stock
  • 1/4 C. flat-leaf parsley, chopped
  • 1 lb. ground beef
  • 1/3 C. breadcrumbs
  • 2 eggs
  • 1/4 C. Parmesan cheese, grated
  • 1/4 tsp. pepper
  • 1 tsp. salt
  • Other:
  • 1 jar of your favorite marinara sauce
  • 1 lb. spaghetti
  • 10 leaves basil, chopped

Mix all meatball ingredients until evenly combined. Form into small-sized meatballs. Put 4 Tbs. olive oil in a large frying pan over medium heat. Slowly add meatballs and brown on all sides for about 10 to 15 minutes. Drain on paper towels. Mix meatballs with marinara sauce. Cook pasta according to package directions. Drain pasta. Mix pasta with marinara sauce. Top with meatballs. Sprinkle basil.
