The Best Microwave Chocolate Chip Cookies

- 1 Tbs. coconut oil
- 1 Tbs. Splenda
- 1/2 Tbs. Splenda brown sugar blend
- 1 egg yolk
- 3 1/2 Tbs. whole wheat flour
- 2 Tbs. sugar-free chocolate chips
- pinch kosher salt
- 1 dash vanilla
Melt coconut oil in a coffee mug on low for approximately 30 seconds. Once melted, add the Splendas, salt, egg yolk, and vanilla. Whisk very thoroughly. Add flour and continue vigorously stirring. It should resemble cookie dough. Gently fold in chocolate chips.
Liberally spray the sides of the mug with cooking spray. Microwave for approximately 45 seconds.
Repeat this process as many times as desired to create a whole batch!
