  • 1/2 C. butter, softened
  • 1/2 C. sugar
  • 3 large eggs
  • 1 tsp. orange zest, grated
  • 1/2 tsp. vanilla
  • 2 C. flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2/3 C. orange juice

Preheat oven to 350 degrees F. Grease and flour a 10-inch springform pan. Beat butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in zest and vanilla. Sift together flour, baking powder and baking soda. Add to butter mixture alternately with orange juice. Pour batter into prepared pan. Top with remaining batter and streusel. Bake for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool on wire rack for 10 minutes. If you desire, garnish with orange slices and any other fruit.
