The Best Roasted Leg of Lamb Ever

Ingredients

  • 6 potatoes, peeled and cut into 1-inch chunks
  • 3 Tbs. olive oil
  • pepper
  • salt
  • 1 bone-in lamb leg, trimmed
  • 6 garlic cloves
  • 2 Tbs. chopped rosemary

Directions

Preheat oven to 350 degrees. Put the potatoes in a large roasting pan. Toss with oil and salt and pepper to taste. Make slit all over the lamb with a small knife. Poke some of the garlic and rosemary into the slits. Do not use all. Sprinkle meat with salt and pepper to taste. Push ptoatoes aside and add meat fat-side up.


Put the pan in the oven and cook for 30 minutes. Turn the potatoes. Roast 30-45 minutes more. Remove the pan from the oven and transfer the lamb to a cutting board. Cover the meat with foil. Let rest for 15 minutes before slicing. Test potatoes for doneness by piercing them with a knife. If they need more cooking, turn oven up to 400 degrees, return the pan to the oven and cook until tender. Slice lamb and serve hot with potatoes.
