  • Filling:
  • 3/4 C. sugar
  • 1/2 C. light brown sugar
  • 1/2 C. cornstarch
  • 1/4 tsp. salt
  • 6 egg yolks
  • 4 C. milk
  • 8 Tbs. butter (cold)
  • 4 tsp. vanilla
  • 50 vanilla wafer cookies
  • 3 or 4 bananas (cut into 1/4 inch slices)
  • Topping:
  • 2 C. heavy whipping cream
  • 3 Tbs. sugar

To begin the filling, whisk sugars, cornstarch, and salt
Add egg yolks and 1/2 cup of milk
In a large saucepan, bring remaining milk to a boil over medium heat
Gradually pour milk over egg mixture, then back into saucepan over medium heat
Allow the mixture to thicken for five minutes
Remove from heat. Add butter and vanilla
Spread half of the custard into 13 X 9 inch baking dish
Top with vanilla wafers
Top with sliced bananas
Spread remaining custard over top
Cover dish with plastic wrap
Refrigerate until cool (4+ hours)
When ready to serve, prepare topping. Beat cream and sugar at medium speed to form peaks
Spread over custard
