  • 3 C. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. of baking soda
  • 1 tsp. baking powder
  • 2 tsp. of cinnamon
  • 1 tsp ginger
  • 1 C.. sugar
  • 1 C. vegetable oil
  • 1 C. packed brown sugar
  • 3 eggs
  • 2 tsp. vanilla extract
  • 2-3 C. grated zucchini

Preheat oven to 325 degree F. Combine flour, salt, baking soda, baking powder, cinnamon, and ginger in a large bowl. In another bowl, mix sugar and oil until creamy. Mix in brown sugar, eggs, and vanilla. Slowly add the dry mixture and stir until well combined. Fold in the grated zucchini. Pour into greased and floured loaf pans and bake for 45-60 minutes. (makes two loaves)
