The Easiest 5-Minute Crepes On Earth

- 1 Tbs. butter
- 3 lg. eggs
- 1 C. all-purpose flour
- 1 Tbs. sugar or sugar substitute
- 1/2 tsp. salt
- 1 1/2 cups whole milk (you need the fat from the whole milk)
Melt the butter for approximately 30 seconds in the microwave, or until just melted (do not allow it to separate). While whisking, gradually add the remaining ingredients. Continue to whisk until it's very smooth. There should not be lumps like a pancake batter.
In a nonstick skillet over medium heat, heat the pan for about 2 minutes. Spray with cooking spray (it needs to be extra non-stick), and gently ladle a bit of the batter into the pan. Swirl the pan around over the heat so the batter is well distributed. Cook for about 1 minute per side, and remove from heat. Fold in your favorite fillings and dust liberally with powdered sugar.
