The Easiest Irish Soda Bread
Serving Size / Yield
- 4 C. flour
- 4 Tbs. sugar (or sugar-substitute that can be used for baking)
- 1 tsp. baking soda
- 1 Tbs. baking powder
- 1/2 tsp. salt
- 3/4 C. sweet cream butter, softened
- 1 1/2 C. heavy cream (or buttermilk)
- 1 egg
- raisins (if desired)
Preheat the oven to 375 degrees and grease a large baking sheet. In a bowl, mix the flour, sugar, baking powder, baking soda, salt, 1/2 the cream, and 1/2 the butter. If adding raisins, do so here. Form the dough into a round and place onto a baking sheet.
In a bowl, mix the remaining cream and butter. Using a sharp knife, cut a cross into the top of the loaf and and brush the top with the mixture.
Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean. Brush with the cream and butter mixture 5 minutes before removing from the oven. Dust with powdered sugar, if desired.
