  • Crust:
  • 2 graham cracker sheets
  • 1 T. butter, melted
  • 1 tsp. sugar
  • Pinch of salt
  • ¼ tsp. cinnamon
  • Filling:
  • 6 oz. cream cheese
  • ¼ tsp. vanilla
  • 1 large egg
  • ¼ C. sugar
  • Pinch of salt
  • 1/8 tsp. lemon zest
  • 2 tsp. flour
  • Peaches:
  • ½ peeled ripe peach, sliced thinly

Preheat the oven to 350 degrees. Spray your pan with oil to prevent sticking. In a blender, separately mix the filling and the crust. When done pack crust for best results. Bake for 10 minutes, until light brown. Remove from oven and pour the cream cheese mixture onto the crust. Place in oven for 40 minutes and let cool for another 40 minutes. Before you plan to serve, place the finely cut peaches on top of the cake.
