  • cooking spray
  • 2 egg whites
  • 2 tsp. vanilla
  • 4 C. almonds (unblanched)
  • 2 Tbs. Splenda
  • 1 tsp. salt
  • 1/2 tsp. cinnamon

Preheat your oven to 300 degrees. Coat a baking pan with nonstick cooking spray. 

In a large bowl, beat the egg whites until frothy, then add the vanilla. Add the almonds and stir gently to coat. 

Combing the Splenda, salt, and cinnamon. Add to the nut mixture and stir gently to coat. 

Spread the almonds evenly on the prepared baking pan. Bake for 25-30 minutes, or until almonds are crisp, stirring once. 

Cool and store in an airtight container.
