The Reefer Cocktail was served at the Star Chefs Gala which was held at Charlie Palmer Steakhouse’s Rooftop patio in Washington, D.C. The Reefer Cocktail is a cocktail made of rum, honey and mint and is then topped with champagne and Vieux Carré Absinthe.

  • 2 oz. aged rum (Santa Teresa 1796)
  • 3/4 oz. fresh lime juice
  • 3/4 oz. simple syrup
  • 3/4 oz. honey
  • 8-10 mint leaves
  • 1 oz. Vieux Carré Absinthe
  • 1.5 oz. champagne or sparkling wine
  • 1 herb bouquet of rosemary, sage and thyme

Combine rum, lime juice, honey, simple syrup and mint leaves in a shaker. Shake and strain in to a tumbler over ice. Top of the drink with the Vieux Carré Absinthe and champagne and garnish with the herb bouquet.
