- 1 sm. or med. potato, peeled and shredded
- 1 egg
- 1 slice cheese
- salt and pepper
- bacon grease/oil
Heat small amount of bacon grease/oil in a skillet. Shred potato into skillet and flatten to desired thickness. Cook for a few minutes, untill almost done. Break egg on top and cook a few minutes, then turn over and cook a few minutes more. To make sure egg is cooked, turn back over to check. Put slice of cheese on top and let melt. Serve hot. Sprinkle with salt and pepper as desired.
