  • 6 hard cooked eggs, peeled
  • 2 Tbs. celery, minced
  • 2 Tbs. green bell pepper, minced
  • 2 Tbs. zesty bread and butter pickles, minced
  • 2 Tbs. red onion, minced
  • 2 Tbs. radish, minced
  • 2 Tbs. marinated sun-dried tomatoes, minced
  • 1/2 C. light mayonnaise
  • 1 tsp. yellow mustard
  • 1/8 tsp. paprika
  • 1/8 tsp. salt
  • 1/8 tsp. pepper

Slice the boiled eggs in half. Discard two of the yolks. Finely chop the remaining yolks and whites. In a medium bowl, place the eggs, celery, bell pepper, pickles, onion, radish and tomatoes. Stir in the mayonnaise, mustard, pickle brine, paprika, salt and pepper. Chill before serving.
