  • 1 C. unsalted butter, room temperature
  • 1 C. granulated sugar
  • 1 egg, room temperature
  • 1 tsp. pure vanilla extract
  • 2 C. whole wheat flour
  • 3/4 C. cocoa powder
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • Filling:
  • 1/2 C. unsalted butter, room temperature
  • 2 T. half-and-half
  • 1 tsp. pure vanilla extract
  • pinch of salt
  • 3 C. powdered sugar, sifted

In a large bowl, cream together butter and granulated sugar. Add in eggs and vanilla. In another bowl, sift together flour, cocoa powder, baking powder, and salt until lumps are gone. Add the dry ingredients to the wet mixture and mix until incorporated. Divide dough in half and place in your refrigerator for one hour. Preheat your oven to 350°F and line a baking sheet with parchment paper. Roll out chilled dough onto a lightly floured surface to achieve 1/8-inch thickness. Cut the dough into the shape of your choice and bake for 10 minutes. In a large bowl, combine 1/2 C. butter, half-and-half, vanilla, and salt until well mixed. Slowly add in sifted sugar and mix on low until incorporated. Spread filling on half of the cookies and place the remaining cookies on top, forming a sandwich cookie.
