  • 1 stick butter
  • 2 C. brown sugar
  • 1 C. light corn syrup
  • ½ tsp. salt
  • 1 (14 oz.) can sweetened condensed milk
  • 1 ½ tsp. vanilla extract
  • 10 Granny Smith apples
  • Popsicle sticks
  • 1-2 C. peanuts, chopped

Remove apple stems and insert Popsicle sticks firmly into core. In a large saucepan, melt butter and stir in brown sugar, light corn syrup, and salt. Cook mixture for about 10 minutes over medium heat until the sauce comes to a boil. Stir in milk and heat for an additional 5 minutes. Remove from heat and mix in vanilla. Coat each apple in caramel, dip in peanuts, and transfer to a baking sheet lined with wax paper. Let set up completely and serve.
